What is the difference between extracts and flavoring oils?

To start about what is similar between extracts and flavoring oils is the fact that they're both flavoring ingredients. However, the main difference is that flavoring oils are not made with alcohol and therefore cannot be labeled an extract. Fortunately, though, most recipes and substitute flavorings for extracts and vice versa. 

Extracts use approximately 35% alcohol solution to suspend the flavor ingredients. While flavoring oils are a medley of natural and artificial flavoring components to create a complex flavor profile.  Many of the ingredients found in flavoring oils range from varying ingredient bases such as, isolates, absolutes, essences, essential oils, extracts, oleoresins, and other compounds.

Do flavoring oils have a scent?

Flavor oils contain both a scent and taste. In order to obtain the full effect of the flavor, sweeteners and acids can be included. 

Can you eat flavoring oil?

Since flavoring oil is highly concentrated, it is recommended to only eat it once it has been cooked or embedded into a larger batch of cooking applications like sauces, gummies, hard candies, chocolates and other fat soluble bases.

What is a flavor concentrate?

Most flavor concentrates are water based and utilized for e-juice products. However, Dolce Foglia's concentrates are all oil based flavors that are best used in cooking confectionery products such as, chocolates, hard candies, gummies, gum, candy coatings, and baking. 

The purpose of making them so concentrated is for our customers to get more for their buck. Concentrated oil flavoring requires less packaging, takes us less storage space, and is extremely versatile in application use where a customer can use our flavors for many activities or hobbies. 

How much flavor concentrate should you use?

The use rate depends on the flavor. But the general rule of thumb for Dolce Foglia's concentrated flavor oils is to use about 0.1-0.5% of the total batch size.

To break this down into numbers, here is a simple equation.

Total batch size = 100 grams

Flavor use = 0.5%

Flavor use in grams = 0.5 grams or 500 milligrams

Do flavor concentrates go bad?

Flavor concentrates don't actually spoil but as a food product, we put "best by" dates on our products with the typical best by timeline is 2-3 years. These dates have a tendency to be relatively arbitrary as the flavor quality remains high post best by date.
